Slow cooker chili

This is a favorite of mine that my mom used to make often! Perfect for the colder months and easy to prepare because you can throw everything in the crockpot and go about your day. I love to serve it with some warm cornbread.

Ingredients:

  • One diced yellow onion

  • 4 minced garlic cloves

  • Ground turkey breast or lean beef

  • 2 tbs chili powder

  • 1 tsp oregano 

  • 1 tsp cayenne

  • 2 tbs sugar

  • Celtic salt

  • Cracked pepper

  • 2 tbs tomato paste

  • 15 oz can diced tomatoes

  • 8 oz tomato sauce

  • 2 ½ cups of chicken broth

  • 2 cans of rinsed and drained kidney beans

Directions:

  1. Sauté the onion and garlic over medium heat until they are soft and transparent in a large skillet (unless you have a crockpot with a sauté setting). Add the ground turkey and continue to sauté until fully browned, then add oregano, cayenne, chili powder, and tomato paste. 

  2. If using a separate pot, transfer to crockpot.

  3. Drain the beans and add them to the pot along with the diced tomatoes, tomato sauce, 2 ½  cups of chicken broth, sugar, salt, and pepper. Stir until well combined. Place a lid on the crockpot and allow it to cook on low for 6 hours or high for 3-4 hours.

  4. Garnish with toppings of your choice. I like to use cheese, green onions a little sour cream.

  5. Enjoy with some warm cornbread!
