Spicy Rigatoni alla Vodka

Spicy Rigatoni Alla vodka 

Ingredients:

  • 1 lb Rigatoni

  • 2 shallots, finely diced

  • 4 cloves Garlic minced

  • 1 Cup Cream

  • 1/4 cup vodka

  • 1 28 oz can crushed tomatoes

  • ½ Serrano, deseeded and diced

  • 1tsp oregano

  • ¼ cup of fresh Basil chopped

  • 1/2 Cup parmesan for garnish

  • 2 Tablespoons, Unsalted Butter

  • Celtic salt & pepper

Directions:

  1. Prepare the shallots, garlic, basil and Serranos

  2. Boil a 4ct pot of water for the pasta with Celtic sea salt

  3. Melt 2 tbsp of butter in a medium sized saucepan, then add garlic, shallots, Serrano pepper and cook till fragrant on medium heat

  4. Add ¼ cup of vodka to pan and deglaze, then add the crushed tomatoes, oregano, basil, salt, pepper and let simmer for 20 minutes occasionally stirring.

  5. Turn off heat and add parmesan and heavy cream

  6. Once the pasta is al dente, drain and transfer to the saucepan, and marry the sauce with the pasta for a couple of minutes until the sauce coats the pasta. Top with extra parmesan and red pepper flakes for more spice.
